First, prepare and measure out all of your chocolate pretzel ingredients with the measuring cup and spoons.
Next, combine the lavender candy melts and 1 tbsp. of coconut oil in the candy melting pot.Don’t have a candy melting pot? Keep reading for a microwave method!
Melt them together on high and stir regularly with a heat resistant spatula until the mixture reaches a smooth consistency. Then, remove the silicone liner of lavender chocolate from the candy pot and let it cool to 113°F.
Then, repeat the melting and cooling process with the white candy melts and 1 tsp. coconut oil. Melt them into a smooth consistency and cool the chocolate to 113°F.
While the white chocolate is melting, line a baking sheet with a parchment paper sheet or wax paper and set out the pretzel twists, lavender chocolate, unicorn sprinkles, and dipping tools.
Begin dipping by fully submerging a pretzel twist into the lavender chocolate. Each pretzel needs to be completely covered in chocolate.
Using a fork or dipping tool, scoop the dipped pretzel out and let the excess chocolate drip off from the pretzel.
Then, immediately after dipping each pretzel, sprinkle some of the unicorn sprinkles on one side of the pretzel. Spread the dipped pretzels over the lined baking sheet then refrigerate them for 10 minutes.
While chilling the dipped pretzels, set the mermaid tail silicone mold on a baking sheet on a completely flat surface.
Using a saucier spoon, or just a plain ole’ spoon, lightly drizzle the lavender melted chocolate in the bottom of the molds.
Then, fill the rest of the molds with the white melted chocolate, but do not overfill them! Tap the tray lightly on the table or counter to remove any air bubbles.
Next, scrape away any extra chocolate from the tops of the molds with a cake spatula.
Refrigerate the mermaid tail molds for 10 minutes.
Then, put on gloves and carefully remove the chocolate tails from the molds. Repeat steps 10-14 to make another batch of chocolate mermaid tails.Using gloves is important to protect the chocolates from melting due to the body heat of your hands.
Next, drip a little dot of lavender chocolate on the pretzel (on the opposite side of the sprinkles) and immediately place a chocolate mermaid tail on top.
Repeat the process for all the pretzels.
Finally, serve and enjoy these enchanting treats or package them up to send to a loved one!

Notes
Storing Chocolate Covered Pretzel TwistsTo store chocolate covered pretzels: transfer the candied pretzels to either a large ziploc bag or an airtight container. Separate the layers with a sheet of parchment or wax paper to keep the pretzels from sticking together. Label the date on the outside of the container. Store at room temperature or slightly cooler for up to 2- 3 weeks. I do not recommend storing these long-term in the fridge or the freezer due to the pretzels softening or going stale from moisture.
